Lemon cream tarts: a real treat for your palate

Ingredients:
250g puff pastry
250ml milk
115ml water
160g sugar
30g all-purpose flour
4 egg yolks
Peel of a lemon
1 teaspoon cinnamon powder
Directions:
Roll out the puff pastry and roll it up, then cut it into small pieces and roll it out into the mold, put it in the fridge.
Heat the water in a saucepan with lemon peel and cinnamon, then strain.
Mix the flour and milk, then let it thicken over low heat and add the juice and egg yolks. Bring back over low heat, let it thicken and let it cool.
Fill the pastry bowls and bake at 250°C (500°F) for 18 minutes.
