1.Baked parmesan tomatoes

METHOD
1. Preheat oven to 360°F.
2. Place tomatoes cut-side up on a baking sheet. Top with Parmesan, oregano, salt and mozzarella.

METHOD
1. Remove the pulp from the tomatoes and let them dry.
2. Blend together the parsley and basil. Add the bread (crumb only), garlic, salt, pepper, and the tomato pulp.
3. Fill the tomatoes with this mixture.
4. Drizzle with some oil and bake at 190°C for 20 minutes.

METHOD
- Wash tomatoes well, dry with paper towels.
- Cut in half and place on a baking rack with the cut part up. Add salt to the tomatoes and bake for 3-4 hours at 90ºC/190ºF.
- Make sure to monitor the tomatoes so that they do not burn, and leave the oven door slightly open so that the excess moisture can escape.
- Place the tomatoes in a glass jar. Add salt, pepper, basil and olive oil.
- Use a plastic glass to compress the tomatoes and place the lid on top.
- Serve with fresh bread, capers and basil.
