1. Apple sunflower
INGREDIENTS

METHOD
- Cut an apple into cubes and place it in a pan with butter. Add brown sugar and mix well.
- Spread apple puree over a sheet of puff pastry in a ring. Then put the apple mixture on top.
- Place two straws that reach the center of the puff pastry.
- Place another circle of puff pastry on top and use a fork to join the edges.
- With a cutter make several cuts around the circle without reaching the center. Take each slice and twist it.
- Use the straws to inflate the center of the dough.
- Bake at 190ºC (374ºF) for 10 minutes.
- Use a knife to cut the puff pastry bubble and turn it over.
- Pour custard into the bubble.
2. Soft apple and blueberry cake
INGREDIENTS
• 250g flour
• 150g sugar
• 125g white yogurt
• 40g vegetable oil
• 2 eggs
• 1 apple, slices
• 1 apple, diced
• 125g blueberries
• 12g baking powder
• zest of 1 lemon
• 1 pinch of salt
• 1 pinch of cinnamon
• 1 tsp vanilla extract
• 25g blueberries
• 1 tsp sugar
• blueberry + mint for decoration
METHOD
1. Peel 2 apples without a core, 1 cut into cubes, and the secon into slices
2. In a medium bowl, beat eggs with sugar for 3-4 minutes
3. Add yoghurt, vegetable oil, lemon zest, vanilla extract and cinnamon, beat until combined.
4. In the small bowl, mix the blueberries with 1 tbsp flour.
5. Sift flour and add it to the egg mixture, add the flour, beat using an electric mixer
6. Add baking powder and salt.
7. Add diced apples, and blueberries.
8. Butter and sprinkle with flour baking form, fill with dough.
9. Put sliced apples on top and add some blueberries, sprinkle with sugar.
10. Bake at 170°C/340°F for 40-45 minutes, sprinkle with powdered sugar.

3. Apple Rose Cake
INGREDIENTS
2 apples
lemon juice
1 tsp brown sugar

For the batter:

200g sugar
8g baking powder
125g yogurt

METHOD
1. Thinly slice the apples. Pour the lemon juice and sugar over them and microwave them for 3 minutes. They should be soft and flexible enough to be rolled up and not break.
2. Prepare the batter by beating together the eggs and sugar, then add the yogurt, lemon zest, flour and baking powder.
3. Pour the batter into a 24cm cake pan and place the roses ( use 7 slices of apple to make each rose) on top. Sprinkle with brown sugar and almonds.
4. Bake at 180°C for 45 minutes.

a pinch of salt

METHOD
1. Slice the apples into thin slices. Place them in a bowl and squeeze out the juice of one lemon over them, add some cinnamon, brown sugar and let them sit in this mixture for 10 minutes.
2. Place the shortcrust in a 24 cm pie dish. Fill it with the custard cream and place the apple slices all around to form one large rose.
3. Bake the pie at 180°C for 35 minutes or until golden brown
4. Brush the top of the pie with some apricot jam and serve warm.
