Traditional zucchini fritters are usually deep-fried to crispy perfection, but with this easy baked zucchini fritters recipe, you can enjoy them without feeling guilty at all.

Traditional zucchini fritters are usually deep-fried to crispy perfection, but with this easy baked zucchini fritters recipe, you can enjoy them without feeling guilty at all.

INGREDIENTS

2 zucchini
breadcrumbs
salt
pepper
rosemary
parmesan
METHOD
1. Grate the zucchini, add parmesan, 1 egg and breadcrumbs.
2. Add the zucchini and pepper to the batter.
4. Mix together the grated zucchini, with salt and pepper.
5. Using a spoon or medium sized ice cream scoop, scoop out about 2 tablespoons of the batter and drop onto the baking sheet. Continue until you run out of the batter.
6. Bake for 15 minutes or until golden.
7. Let it cool for 5 minutes before serving!
