Homemade pupusas: delicious cornmeal flatbread

Ingredients:
Dough:
2 cups masa flour
1 ½ - 1 ¾ cups warm water
½ tsp. salt

Filling:
1) 1 cup shredded pepperjack cheese
½ cup cotija cheese
½ cup cotija cheese
2) 1 lb. pork butt roast
1 cup water
3 garlic cloves, chopped
1 tsp. salt
8 cherry tomatoes
1/4 of an onion
1 tablespoon canned green chiles

3) 3 cups water
1 8-oz. bag shredded cabbage
2 tablespoons lime juice (juice of one lime)
1 tablespoon sriracha
1 tablespoon olive oil
1 tsp. sugar
½ tsp. salt
¼ cup water
½ cup grated carrot
¼ cup grated onion
1 8-oz. bag shredded cabbage

Directions:
Dough: in a large bowl mix well the three ingredients, make a ball.
Filling 1: Mix the two cheeses.
Filling 2: cook the pork for 30 minutes with water, garlic and salt. Make the sauce and blend the tomatoes and onion, then add the green chili.
Heat sauce and pork for 5 minutes and then blend all, cheeses too.
Filling 3: in a bowl whisk together the lime juice, sriracha, olive oil, sugar, salt and water. Pour on the veggies and mix well.
Make the pupusas and fill them, cook on a skillet and brown them.
