Honey Castella Cake: Tall, Fluffy And Simple To Make

Ingredients:
5 eggs
150g sugar
150g all-purpose flour
45g honey
45ml hot water
15g glucose syrup
15ml sake
Directions:
In a bowl, mix honey, glucose syrup and sake. Dissolve by placing the bowl onto another bowl full of hot water.
Whip the eggs with the sugar until mixture is frothy, then strain and add the flour. Add the previously prepared mixture and pour into an 18 cm mold. Bake at 170°C (340°F) for 35 minutes then at 220°C (440°F) for 5 minutes.
