Berry cheesecake: creamy, fresh and easy to make!

This cheesecake recipe is the Best, it will become your favourite dessert. Fast and easy!

Pie crust:
320g flour
¾ tsp baking powder
¼ tsp salt
90ml vegetable oil
90ml aquafaba (chickpeas water)
42 oz cream cheese, soft
1 cup sugar
1/4 cup cream
3 tbsp flour
1/2 tsp lemon zest
1/4 tsp vanilla extract
2 eggs
1 egg yolk
1 cup strawberry, chopped
1 cup blueberries, chopped
Berries for decoration
METHOD
- Grease baking form.
- In your food processor, put all the ingredients for the pie crust and combine
- Put the dough in the prepared form and, using your hands, evenly distribute the dough to the bottom of the form.
- Bake for 12-15 minutes at 200°C/400°F or until golden brown. Set aside to cool.
- Reduce to 160°C / 325°F.
- In a large bowl, whip the cream cheese until it is smooth and there are no lumps. Add sugar, cream, eggs, egg yolk, flour, lemon zest and vanilla in a bowl and beat until smooth.
- Divide the dough in half. Fold the chopped strawberries and blueberries in half a dough. Pour into the cake. Add the second part of the cheesecake.
- Bake at 325F / 160C for 1 hour 45 minutes.
- Turn off the oven and open the door. Allow the cheesecake to cool slowly for 1 hour.
- Chill for 10 hours
- Garnish with chopped fresh strawberries and blueberries.
