Berry cheesecake: creamy, fresh and easy to make!

This cheesecake recipe is the Best, it will become your favourite dessert. Fast and easy!

INGREDIENTS
Pie crust:
320g flour
¾ tsp baking powder
¼ tsp salt
90ml vegetable oil
90ml aquafaba (chickpeas water)

42 oz cream cheese, soft
1 cup sugar
1/4 cup cream
3 tbsp flour
1/2 tsp lemon zest
1/4 tsp vanilla extract
2 eggs
1 egg yolk
1 cup strawberry, chopped
1 cup blueberries, chopped
Berries for decoration
 
METHOD
  1. Grease baking form.
  2. In your food processor, put all the ingredients for the pie crust and combine
  3. Put the dough in the prepared form and, using your hands, evenly distribute the dough to the bottom of the form.
  4. Bake for 12-15 minutes at 200°C/400°F or until golden brown. Set aside to cool.
  5. Reduce to 160°C / 325°F.
  6. In a large bowl, whip the cream cheese until it is smooth and there are no lumps. Add sugar, cream, eggs, egg yolk, flour, lemon zest and vanilla in a bowl and beat until smooth.
  7. Divide the dough in half. Fold the chopped strawberries and blueberries in half a dough. Pour into the cake. Add the second part of the cheesecake.
  8. Bake at 325F / 160C for 1 hour 45 minutes.
  9. Turn off the oven and open the door. Allow the cheesecake to cool slowly for 1 hour.
  10. Chill for 10 hours
  11. Garnish with chopped fresh strawberries and blueberries.
