Arugula, avocado and tomato salad: a delicious Spring and Summertime dish

Ingredients:
5 oz baby arugula
12 oz grape tomatoes
1/3 cup Italian extra virgin olive oil
1 lemon
1 tablespoon white wine vinegar
2 ripe avocados
1/4 red onion, very thinly sliced
1 small shallot
1/2 teaspoon dijon mustard
1/4 teaspoon crushed red pepper flakes
salt and pepper to taste
Directions:
Cut avocado, tomatoes and shallot. In a small bowl, whisk the vinegar, olive oil, mustard, lemon juice, onion, Italian seasonings, salt, and pepper until well combined. Pour the dressing over the tomato salad. Gently mix the salad until the dressing has been evenly distributed.
