Lemon roll: refreshing, easy and delicious

Ingredients:
For the cookie dough (30 cm x 40 cm)
4 whole eggs
120g sugar
60g all-purpose flour
60g potato starch
For the lemon mousse
1 lemon, squeezed
40g powdered sugar
150g vegetable cream
For the syrup
100ml water
50g sugar
zest of one lemon
Directions:
Cookie dough: whisk the eggs with the sugar, then add the two flours and pour the mixture into a baking pan. Bake at 200°C (400°F) for 7 minutes.
Once cooked, moisten the cookie dough with the lemon syrup (put all the ingredients in a saucepan and bring to a boil).
Whip the cream with lemon juice and powdered sugar. Fill and roll the cookie dough and decorate it.
