1 3/4 cup flour

4 oz. Fresh mozzarella, chopped finely
1/4 cup Fresh basil, chopped
Fresh basil for decoration
METHOD
Tie the rope tightly onto the pan handles. Fill the pot with water, add a pinch of salt and bring to a boil.

Mix ricotta, parmesan cheese, eggs and salt in a large zip package. Add flour and mix.
Cut the tip of the bag and squeeze the gnocchi into the water using a rope to separate them. Cook for 3 minutes. Using a spoon with holes, pull them out on a baking tray.
Add gnocchi, tomato sauce, parmesan and mozzarella in a large bowl and mix.
Put in a baking dish, sprinkle with basil and bake at 190C/380F for 20 minutes until the cheese melts and starts to bubble. Garnish with fresh basil.
