Ricotta and jam tart: a fragrant pastry and a delicious filling

Ingredients:
300g all-purpose flour
150g lard
90g sugar
1 egg
Zest of 1 lemon
Garnishing:
400g ricotta
200g sugar
Peel of 1 lemon
Jam to taste
Directions:
Shortcrust: mix lard, eggs and sugar. Then add gradually the flour and lemon zest. Shape a dough and refrigerate for at least 30 minutes.
In a bowl mix the ricotta with sugar and lemon peel.
Roll out the pastry in a buttered baking pan, poke holes onto it and fill it. Cover with strips and bake at 180°C (360°F) for 40 minutes.
