Egg in a nest: a simple tip to make a delicious and nice meal

Ingredients:
1 pound or package of frozen shredded hash brown potatoes, thawed
2 large egg whites, whisked
1/2 teaspoon salt
1/2 teaspoon ground pepper
Cooking Spray or 1 tablespoon of oil for greasing the cups
1/2 cup yellow onion, diced
1/2 cup red bell pepper, diced*
1 tablespoon of EVOO*
Extra salt and pepper to taste
3 strips of turkey bacon*
1 cup of chopped kale, unstemmed*
1/3 cup of grated cheddar cheese*
6-9 whole eggs, depends on size of tins, you may make more nests
Directions:
In a large bowl add in whisked egg whites, salt, and pepper and mix thoroughly. Divide the mixture into the muffin tins and press well. Bake at 400°F(200°) for 10 minutes.
Saute onion, bell pepper, s&p until softened. Then add turkey bacon and kale, stir until lightly browned cooked down. Remove from heat and fill the nest. Add cheese and eggs, bake again and serve.
