Pancakes tiramisu: airy, fluffy and soft!

INGREDIENTS
15g cream cheese
10g butter
15g milk
1 egg yolk
20g flour
Meringue (2 egg whites + 20g sugar + 1 tbsp lemon juice)

50g Mascarpone
10g sugar
50g heavy cream
Cocoa powder

METHOD
In a bowl add cream cheese, butter and milk, microwave for 20 seconds and mix
Add yolk, mix until combined. Add sifted flour.
Gradually add meringue.
Add pancake mixture into the pan and add a little water and cover with  lid.
Throw one pancake on another and add water again, cover with lid.
For cream:
Whip mascarpone with sugar, add heavy cream and beat until cream thickened.
Add cream on pancakes, sprinkle cocoa and decorate with strawberries and mint.
