Chocolate ganache cookie sandwich: crispy with a creamy heart

Ingredients:
50g butter
20g shortening
70g granulated sugar
60g egg white
70g cake flour
10g cocoa powder
200g chocolate
60g whipping cream
20g butter
Directions:
Whip the egg whites and in another bowl beat the butter. Add shortening and sugar, then add the whipped egg whites. Sift and add flour and cocoa powder. Place the batter into the mold and bake at 340°F (170°) for 9 minutes.
Melt the chocolate whit cream and butter, then refrigerate and fill the cookies.
