Ricotta And Lemon Treats: A Light Flavor That Will Drive You Crazy

Ingredients:
250g ricotta
200g sugar
125g all-purpose flour
100g potato starch
100g melted butter (or 80g seed oil)
3 eggs
55g lemon juice (1 lemon)
lemon peel, untreated
1 teaspoon vanilla extract
2 tsp yeast (16 gr)
pinch of salt
Directions:
In a bowl, whip the ricotta with salt, sugar, vanilla extract, zest and lemon juice. Then add the eggs, flour, starch, yeast and melted butter. Mix until smooth, pour everything into a rectangular and buttered baking pan. Bake at 180°C (360°F) for 30 minutes.
