Lemon Gooey Butter Cookies: melt-in-your-mouth deliciousness

Ingredients:
2¼ cups all-purpose flour
2 teaspoons baking powder
226 g cream cheese
113 g unsalted butter
300 g granulated sugar
2 tablespoons freshly grated lemon zest
1½ tablespoons freshly squeezed lemon juice
1 teaspoon pure vanilla extract
⅛ teaspoon lemon oil
⅛ teaspoon natural yellow gel based food coloring
1 teaspoon fine-grain sea salt
2 teaspoons baking powder
226 g cream cheese
113 g unsalted butter

1 large egg plus 1 large egg yolk
1 cup sugar
1 cup sugar
Directions:
In a medium bowl, whisk together flour and baking powder. Mix cream cheese and butter. Beat in sugar, lemon zest and juice, vanilla, lemon oil, food coloring and salt; mix until well combined. Add egg and egg yolk and beat in well. Add flour mixture and mix until just fully incorporated. Cover work bowl and refrigerate at least 2 hours. Roll dough between palms of hands to achieve a small rounded ball and then roll in confectioners’ sugar to lightly coat. Place dough balls on baking sheets. Bake them about 14 minutes.
