Focaccia Strips: A Crispy And Irresistible Snack

Ingredients
340g All-purpose Flour
210g Water
21g Extra virgin olive oil
3g Malt or Sugar
6g Fresh Yeast
8g Salt

Directions:
Pour water into the bowl, add the malt, yeast and mix. Add the extra virgin olive oil and combine everything. Add the flour and start kneading, then add the salt. Transfer the dough onto the pastry board and form a ball. Let our dough rise for about 45 - 60 minutes. Once it is almost doubled in volume, give it a rectangular shape. Roll out the dough with a rolling pin until it reaches the same length as the pan and a width that can be cut in one stroke with the spatula. Gently transfer 8 pieces onto a baking sheet, stretching them to the edges of the pan. Let rise for about 45 minutes. After the second rising, salt to taste, brush with extra virgin olive oil and bake for about 15 minutes.
