Stuffed Sweet Potato with chilli meat: an explosive meal

Ingredients:
4 sweet potatoes
500g beef mince
2 red onions, chopped
1 red pepper, chopped
4 garlic cloves, crushed
2 tsp Paprika
2 tsp Cumin
1 tsp Origanum
1 tsp chilli powder
1 tin tomato and onion mix
1 beef stock pot
1 tin kidney beans
Salt and pepper to taste
1 cup grated mozzarella cheese
Smashed avocado
Sprouts
Olive oil as indicated in recipe
Directions:
Poke holes in each sweet potato, season with salt and bake at 356°F (180°C) until soft. Brown the meat in a pan, then heat 1 tbsp olive oil in a large pot, fry the chopped onions, pepper, crushed garlic together with the paprika, cumin, origanum and chilli powder.
Add the tin of tomato and onion mix, beef stock pot, salt and pepper and kidney beans. Finally mix with the meat.
Fill the potatoes and cover them with cheese, bake in the oven at 180°C until the cheese is melted.
