Arugula roll:
INGREDIENTS
100g arugula
pine nuts
olive oil
salt
6 eggs
40g Parmesan cheese

250g cream cheese
250g smoked salmon

DIRECTIONS
Chop up the arugula and pine nuts. Season with salt, pepper, and olive oil. Add the eggs and Parmesan cheese. Pour the mixture into a pan and bake at 190° for 15 minutes. Let it cool, and then spread some cream cheese over it and add some slices of smoked salmon. Roll it up and refrigerate for about 60 minutes. Slice it and serve cold!

Wrap the ‘cake’ in plastic wrap and refrigerate for a couple of hours. Once you are ready to serve it, decorate it some arugula, cherry tomatoes, and some olive oil!
