Meatballs recipes for a tasty dinner!

Pumpkin meatballs:
INGREDIENTS
600g pumpkin
salt
rosemary
olive oil
parsley
60g breadcrumbs
50g Parmesan cheese
1 egg

DIRECTIONS
1.Slice the pumpkin. Season with salt and a bit of olive oil and rosemary. Bake at 200°C for 30 minutes.
2.Mash the pumpkin, add the Parmesan cheese, breadcrumbs, salt, egg, and parsley. Make a puree, if it seems too watery, add some breadcrumbs.
3. Make some balls and add a cube of cheese to the center of each.
4. Roll each ball in breadcrumbs and refrigerate them for 30 minutes. Deep fry.

½ cup mozzarella, shredded;
½ cup mozzarella, cubed;
2 tbsp chopped parsley;
1 egg;
800 g (1.7 pounds) mashed potatoes;
½ cup flour;
vegetable oil for frying.

Instructions
Preheat your oven to 190C/375F. Layer parchment paper over the baking sheet.
Combine minced beef with shredded mozzarella cheese, parsley, egg and a generous pinch of salt and pepper.
Divide the beef mixture into 8 parts and make a thin patty from each one of them. Place a cube of mozzarella cheese in the middle of the patty, gather the beef mince together and roll into a meatball.
Cover the meatball with mashed potatoes using same technique.
Cover each meatball with flour and deep fry in preheated (180C/350F) oil for 3-4 minutes or until golden.
Transfer onto paper towels to remove excess grease. Serve topped with fresh herbs.
