Baked omelette:
Ingredients:
1 Red Pepper.
1 Onion.
50g Ham (around three slices).
6 Eggs.
20g Chives (snipped).
50g Mozzarella Cheese.
50g Cheddar Cheese.
4 Slices of Bread.

Instructions:
Dice your red pepper, onion and ham.
Lightly beat together the eggs.
Add in the pepper, onions, ham, chives and both types of cheese.
Season with salt and pepper and mix together.
Line a baking tray approximately 28cm by 23cm with baking parchment.
Place 4 slices of bread in the base of the baking tray.
Pour in your egg mix and bake in the oven at 180°C or 350F for 20-23 minutes.
Allow to cool a little before cutting.

Bacon Toast:
Ingredients:
12 slices bacon;
2 slices sandwich bread;
12 cheddar cheese, grated.
12 slices bacon;
2 slices sandwich bread;
12 cheddar cheese, grated.
Instructions
Braid bacon strips as shown in the video.
Lay a piece of sandwich bread on top of the braided bacon, add shredded cheese and another piece of toast bread.
Wrap cheese toast with braided bacon to cover each side. Use toothpicks to secure some of the bacon strips if needed.
Fry bacon toast for 2-3 minutes on each side (medium heat) or until bacon is brown and crispy. Slice in half before serving.

INGREDIENTS FOR 2 SERVINGS
400g potatoes
200g flour
50g Parmesan cheese
1 packet of baking powder
salt
pepper
parsley
1 egg
100g bologna
6 slices of cheese

METHOD
Boil and mash the potatoes and add salt, pepper, and parsley to them. Once they have cooled, add the egg, flour and baking soda. Spread out the mixture and cut out four squares, these will be used as the slices of bread for your sandwiches. On two of these squares place the bologna and the cheese slices (you can fill them with anything you like), top with the other slice and carefully seal all four sides. Cook them in a pan on low heat for about 8 minutes per side. Serve hot!
