Zucchini Dinners You'll Actually Look Forward To

Zucchini cakes:
INGREDIENTS
300g zucchini
salt
150g flour
2 eggs
80g Parmesan cheese
60ml milk
8g instant yeast
pepper
DIRECTIONS
1. Grate the zucchini, strain them and let them dry off for 15 minutes.
2. Prepare the batter by combining the flour, eggs, Parmesan cheese, milk and yeast.
3. Add the zucchini and pepper to the batter.
4. Pour a spoonful of the batter into hot oil and let it cook for 2/3 minutes per side.
5. Sprinkle with salt and serve hot.

1. Clean the prawns, roll them up in a thin slice of zucchini.
2. Use a toothpick to close the roll up. Dip them in egg wash and then cover them in breadcrumbs.
3. Fry them or bake them at 180°C for 10 minutes.
4. Serve them with some dipping sauces.

Zucchini Parmesan:
INGREDIENTS
2 zucchini
flour, as needed
olive oil
ham
400g mozzarella
mint, as needed
Parmesan cheese, as needed
DIRECTIONS
1. Slice the zucchini into very thin slices. You can use a potato peeler. Cover the slices in flour.
2. Place a layer of sliced zucchini in a pan with a bit of oil. Add a layer of ham one of mozzarella cheese and some mint leaves.
3. Continue alternating the layers until you have filled the pan. Cover with a generous dusting of Parmesan cheese and breadcrumbs.
4. Bake at 180°C for 30 minutes and serve.
