Focaccia with cheese: fluffy, creamy and delicious

Ingredients:
500g all-purpose flour
250g milk
25g sugar
5g fresh yeast
10g salt
80g butter at room temperature
1 egg

For the quilt effect:
200g mozzarella or smoked cheese
To brush:
1 egg
2 tablespoons milk
1 pinch of salt
Directions:
In a bowl mix milk, sugar and yeast. Then, beat an egg and add to the milk. Sift and add the flour, then the salt and stir. Finally add the butter and stir it all until mixture is smooth. Let rise until doubled, covered with plastic wrap. Subsequently, roll out the dough and form some squares, inserting the mozzarella between the spaces. Let rise until doubled and then brush over the entire surface with milk, eggs and salt (previously mixed together). Bake at 200°C (400°F) for 15 minutes.
