Tempura vegetables: tasty, simple & crunchy

Ingredients:
1 eggplant
3 Carrots
1 onion
Cherry tomatoes
2 zucchini
Green beans
Asparagus
500g all-purpose flour
50g potato starch
1 egg yolk
salt
Cold sparkling water
Olive oil
Directions:
Wash well and cut all the vegetables. Then put them in a bowl and place it on another one filled with ice.
In a bowl pour the flour, salt, starch and mix. Then add the yolk and the water. Stir until mixture is soft and without lumps.
Dip the vegetables in the batter and deep fry in boiling oil.
