Chocolate Layered Mousse Cake

Ingredients:
150g Chocolate cookies or biscuits
50g Melted Butter
480g Cream
Layer 1 Chocolate Mix
150g Dark Chocolate
120ml Cream
1 Tsp Gelatine
20ml Hot Water
Layer 2 Chocolate Mix
150g Dark Chocolate
120ml Cream
1 Tbsp Gelatine
50ml Hot Water
Layer 3 Chocolate Mix
150g Dark Chocolate
120ml Cream
1 Tsp Gelatine
20ml Hot Water
Instructions:
Blend the biscuits to form a crumb.
Pour over the melted butter and then stir to form a buttery crumb mix.
Press this mix onto the base of a 20cm or 8” Spring form tin.
Chill and place in the refrigerator.
Place the chocolate for the first layer in a double boiler and then add the cream and stir until melted.
Mix together the gelatine and hot water and stir until melted
Add the gelatine to the melted chocolate and stir to combine.
Remove from the heat and allow to cool completely.
Repeat this process for the ingredients for layer 2 and 3.
When all of the chocolate mixes are completely cool whip the 480 ml of whipped cream and then divide into 3 bowls.
Add the 3 chocolate mixes to each of the bowls and stir.
Now begin to layer up your cake, add the dark chocolate first and then chill for 20 minutes.
Repeat with the milk chocolate layer and chill, then the white chocolate layer and finally chill over night.
Dust with cocoa powder and serve.
