Flower brioche: the fluffy dessert to surprise everyone

Ingredients:
250 gr flour 00
250 gr Manitoba flour
250 gr ricotta
1 pinch of salt
1 egg
80 gr sugar
Zest of 1 orange
Zest of 1 lemon
1 tsp vanilla essence
20 gr brewer's yeast
1 egg and milk for brushing
 
Directions:
In a small bowl, mix the orange and lemon zest, then add the vanilla essence.
Dissolve the yeast in 100 ml of warm milk.
Then pour the yeast into the mixer and add the flour, ricotta, sugar, herbs, egg and mix until a homogeneous dough is formed. Divide it into 4 and then divide each part in half.
Assemble your brioche cake and let it rise for 90 minutes. Then brush the egg yolk, milk and bake at 356°F (180°) for 30 minutes. Let it cool and stuff it.
