Christmas log: the beautiful and tasty recipe to surprise everyone

Ingredients:
Batter:
4 whole eggs
120 grams of granulated sugar
60 gr of 0/00 flour
60 gr of potato starch
20/30 gr of bitter cocoa
Cream:
250 grams of mascarpone
200 gr of vegetable cream
1/2 cup of espresso
30/40 gr of powdered sugar
Wet:
100 ml of soluble coffee
1 tablespoon of sugar
Rum q.s.
Garnish:
Bitter cocoa
Powdered sugar
Chopped pistachios
Directions:
Biscuit dough: whip the eggs with the sugar, then add the flour and starch. Finally add the cocoa and pour the mixture into a rectangular pan. Bake at 400°F (200 °) for 7/8 minutes.
Whip the cream and add the mascarpone, then add the coffee.
Prepare the syrup by mixing coffee, sugar and rum.
Moisten the biscuit dough, stuff it and roll it up. Decorate the log and keep it in the fridge.
