Zelten, the Italian Christmas dessert with dried fruits

Ingredients:
3 egg yolks (medium eggs)
3 egg whites (medium eggs)
130 grams of sugar
150 gr of butter
250 grams of flour 00
130 grams of milk
1 teaspoon of cinnamon
1 sachet of vanilla yeast
1 small glass of rum
200 gr of dried figs
100 gr of walnuts
80 grams of raisins
50 gr of pine nuts
100 gr of almonds
50 grams of candied citron
50 gr of candied orange
 

Directions:
Blend the dried fruit and mix with the rum, then set aside. Divide the yolks and egg whites, whisk the latter until stiff with a teaspoon of sugar. Then mix the egg yolks with the sugar and add the butter, cinnamon, milk, flour and yeast. Then add the candied fruit and the dried fruit mixture. Mix everything and then add the egg whites. Pour the mixture into a mold and decorate with candied fruit and almonds. Bake at 340°F (170°-175°) for 50/55 minutes.
