How to prepare delicious croissants at home

Ingredients:
250 gr flour 00
250 gr Manitoba flour
70 gr sugar
10 gr brewer's yeast
5 gr salt
30 gr butter
160 gr milk
110 gr water
220 gr butter for puff pastry
1 yolk and 2 tablespoons of lettuce for brushing
Directions:
Dissolve the yeast in the warm milk and add to the two flours. Then add the water, sugar, salt and butter. Form a smooth and homogeneous dough and let it rest for 30 minutes in a warm place.
Meanwhile, roll out the 220 g of butter and leave in the fridge for 30 minutes.
Then roll out the dough and add the butter, make the various folds and refrigerate for 30 minutes. Then re-crease and put back in the fridge for another 30 minutes. Then form the croissants and let them rest for 2 hours.
Brush the egg yolk, milk and bake at 356°F (180°) for 15 minutes.
