The Baked Meatball recipe is just what you need to take everyday meatballs from blah to brilliant. It’s a great way to dress up meat and potatoes and serve it in a fresh, new way that will not only impress your guests but will also have them coming back for more. And it’s easy to prepare too! You only need ground beef, eggs, olive oil, seasoning, cheese, and of course, potatoes. Form small meatballs, and place them in between slices of cooked potato. Drizzle with a bit of oil and seasoning and bake. As easy as that. It’s a complete meal in one dish!

Baked Meatball Variations

For an Italian version, add fresh herbs like basil and oregano to the meatball mixture. Assemble the dish and top with tomato sauce and parmesan cheese before baking.

For a sweet and sour flavor, top with sweet chili sauce, and a dash of vinegar together.

If you prefer extra sweetness, you can brush your favorite BBQ sauce (or ketchup) over the meatballs before you place them in the oven.

Tips

To make the meatballs equally sized, use an ice cream scoop.

If you use frozen meatballs, you will need to increase the cooking time.

For juicy meatballs, don’t overmix the ground beef and seasoning. This will result in tough meatballs. Mix until just combined.

You can also use ground turkey and chicken instead of beef.

The meatballs are ready when the internal temperature reaches internal temperature reaches 165°F.

Ingredients
Potatoes
600g (1.3 lbs)
Ground beef
600g (1.3 lbs)
Chopped fresh parsley
minced garlic clove
Breadcrumbs
50g (1/2 cup)

Instructions

Boil potatoes, peel, and cut into slices.

Place the ground beef in a large mixing bowl, and add the garlic, parsley, breadcrumbs, grated cheese, salt, pepper, nutmeg, and eggs. Mix until all the ingredients are combined.

Form small meatballs using a meatball spoon or ice cream scoop.

Pour a bit of oil into a baking dish. Arrange the potatoes on the bottom of the dish and around the sides.

Place the meatballs on top of the potatoes.

Drizzle with olive oil, then sprinkle with grated cheese.

Insert a few pieces of rosemary and bake for 20 minutes at 180°C / 350°F.

Ready to serve and enjoy!
