Milk cookies: the simple rules to make them perfect

Ingredients:
500 grams of flour 00
125 grams of sugar
125 grams of lard
70 ml of warm milk
5 grams of ammonia
1 sachet of vanillin
1 egg
1 egg + some milk for brushing
Directions:
Dissolve the ammonia in the milk then pour the mixture into a bowl with the flour. Add the sugar, vanillin, lard and egg. Form a homogeneous dough and leave it in the fridge for 30 minutes.
Then form the biscuits and brush them with egg and milk.
Bake at 356°F (180°) for 12 minutes.
