Crispy outside and tender inside, this is the best way to cook eggplants!
INGREDIENTS

3 eggplants
2 eggs
Salt
Pepper
Breadcrumbs
Oil
METHOD
- Boil the eggplants for 10 minutes, then remove the peel. Season with salt, pepper, dip in an egg, roll in breadcrumbs. Dip in egg and breadcrumbs again.
- Fry in a lot of oil.
