Golden eggplants: a delicious idea to cook eggplant!

The whole family will love this recipe!

INGREDIENTS
2 Eggplants
4 Eggs
Flour
4g (1 tsp) Salt
Oil
200g (1 cup) Baked ham
200g (3/4 cup) Mozzarella
Basil
 
METHOD
  1. Peel the eggplants and cut into slices. Cover them with flour and put them into whisked eggs. Fry them in a pan.
  2. On one slice put baked ham, mozzarella and basil. Cover it with the other slice and bake at 180C for 10 minutes.
  3. Sprinkle with some parmesan. Serve.
