Vanilla sponge cake: the recipe to make the best dessert ever

Ingredients:
100 gr soft butter
180 gr sugar
4 eggs at room temperature
grated rind of one lemon
a teaspoon of vanilla extract
80 gr potato starch or corn starch
200 gr flour 00
16 gr of baking powder
a pinch of salt
vanilla icing sugar to decorate
Directions:
Separate the yolks from the whites and semi-whip the whites until stiff with the sugar and a pinch of salt. Add the vanilla extract and egg yolks, then the butter and lemon peel. Finally add the flour, pour the mixture into a baking tray and bake at 356°F (180°)for 40 minutes.
