Breaded eggplants: a unique recipe to fall in love with!

Here's a unique way to cook eggplants!
INGREDIENTS
5 medium eggplants;
3 eggs;
250 g (2 cups) corn flour;
Vegetable oil for frying;
Sauce for serving.
METHOD
- Cut eggplants in half lengthwise, then make 3-5 slits all the way up to the stem (without cutting through).
- Boil eggplants in salted water for 7-9 minutes, remove from the boiling water and set aside to cool down.
- Whisk eggs. Coat each eggplant in egg, then dredge in corn flour and transfer into hot oil (180C/350F).
- Fry for 5-7 minutes, then place on paper towels to absorb excess grease.
- Remove from steam before serving and add your favorite sauce on the side.
