Orange ogura cake: the perfect fluffy dessert!

This is the most fluffy cake you've ever tasted! 

INGREDIENTS
 3 egg yolks;
 1 egg;
 40g (⅙ cup) sugar;
 40ml (2 tbsp) vegetable oil;
 60g (⅓ cup) cake flour;
 40ml (2 tbsp) orange juice;
 1 tsp orange zest;
 3 egg whites;
 50g (¼ cup) sugar;
 ¼ tsp dry yeast.
 
METHOD
  1.  Preheat the oven to 140C/300F. Cover 15x15 cm baking pan with parchment.
  2.  Whisk egg yolks, sugar and the whole egg until pale. Add vegetable oil. Combine with sifted cake flour. Pour in orange juice and zest.
  3.  Separately beat egg whites with 50 g of sugar until soft peaks form.
  4.  Fold half of the whites into the batter, then add leftover batter into the leftover egg whites and fold it in until smooth and airy batter forms.
  5.  Pour into the prepared pan, place the pan into a bain-marie and bake for 50 minutes.
