Piadina tacos: how to make it at home with few ingredients!

Why didn't we think of this before?

INGREDIENTS
 4 chicken cutlets;
 8 tortillas;
 180g (1 ½ cup) breadcrumbs;
 40g (¼ cup) parsley, chopped;
 1 lemon (zest);
 50g (¼ cup) parmesan;
 45ml (3 tbsp) olive oil.
 
METHOD
  1.  Preheat the oven to 200C/400F.
  2.  Pound chicken breasts with a meat mallet to flatten and even them out. Season with salt and pepper slightly, then coat with some olive oil all over.
  3.  Combine breadcrumbs with parsley, lemon zest, parmesan cheese and olive oil until crumbly mixture with a texture of wet sand forms.
  4.  Press the breading on both sides of chicken breasts to cover completely. Transfer onto a parchment-covered baking sheet.
  5.  Bake for 5 minutes on each side, flipping halfway through.
  6.  Fold tortillas on an oven rack to form a taco shell. Bake for 3 minutes or until golden, remove carefully.
  7.  Fill each taco shell with chicken and mixed salad.
