Arrange the vegetables in a round pan and prepare a rich, tasty dish

Ingredients:
Olive oil to taste
1 onion
1 red pepper
1 yellow pepper
1 zucchini
Tomato puree
salt
pepper
3 large eggplants
4 large tomatoes
4 zucchini
Spices to taste
Basil pesto (optional)
Directions:
In a pan, deep fry the onion in olive oil, then add the red pepper, the yellow pepper and the zucchini. Add tomato puree, salt and pepper. Once cooked, pour the mixture into a pan and cover with the vegetables. Lightly brush the pesto and cover with aluminum foil. Bake at 180°C (360°F) for 25 minutes.
