How to prepare real Sicilian arancini or arancine: a recipe you have to try

Ingredients for 20 arancini:
1kg rice
2.2l water
120g butter
20g salt
20 gr bouillon cube
2 bags of saffron
Meat Sauce:
250g ground pork
250g ground beef
2 tablespoons tomato extract
1 \ 2 glass white wine
2 bay leaves
3 cloves
1 carrot
1 onion
1 stalk of celery
1kg rice

Meat Sauce:
250g ground pork

2 tablespoons tomato extract
1 \ 2 glass white wine
2 bay leaves

Add the bouillon cube to the water, or prepare 2.2 liters of vegetable stock, add the salt and saffron (alternatively 100g of tomato sauce). Put over a high flame, wait until it comes to a boil and then drop the rice. When it comes back to boil, stir, lower the flame and let all the water dry. Pour the rice into a pan, make small grooves so that it cools even on the inside, let it cool.
For the meat sauce: chop celery, carrot and onion and brown them in a pan with a little oil. Add the mixed meat and brown. Add the wine, raise the heat and let it evaporate. After the wine has evaporated, add the bay leaf and the cloves. Add a glass of water to the tomato paste, mix it and pour into the pan. Add 2 glasses of water and salt, and pepper, and cook at least 1 hour on low heat until it shrinks.

Take the special tool for the arancini, put the rice on the base, make the hole with the other part, put a couple of tablespoons of meat sauce and cheese or mozzarella, add more rice on the surface. Remove the arancino and prepare the batter for breading.
The batter is made from flour and water, first coat the arancini in the batter and then in bread crumbs. Deep fry in 1 l of peanut or sunflower oil, until golden brown, drain and serve.
