published on 14 June, 2018 at 15:31
Ingredients:
200 gr flour
300 gr strong flour
170 gr lukewarm milk
100 gr sugar
100 gr butter
2 eggs
5 gr salt
1 packet baking powder (1 3/4 teaspoons)
1 teaspoon honey
1 teaspoon barley
malt
lemon zest
orange zest
Directions: In the food processor (or by hand using a bowl) put the milk, 1 tablespoon of sugar and baking powder. Mix and then add the lemon and orange zest and create a batter using honey. Then add the rest of the ingredients and stir until the mixture doesn't stick to the bowl of the processor. Let the dough rise in a greased bowl for two hours (cover with saran wrap). Once ready weigh the dough and take a piece weighing 130 gr. Fromm this amount, divide into 10 small balls. With the rest of the dough make larger balls (100 gr each). Put them on a baking sheet and make a hole in the center and put the smaller ball. Cover and let rise for another two hours. Then brush the yolk together with the milk and bake at 180 degrees for 20 minutes.
