Angel cake: a fluffy cake with a unique flavor

Ingredients:
12 egg whites
8g cream tartar or 1/2 sachet baking powder
300g sugar
180g all-purpose flour
1 teaspoon vanilla extract
Lemon peel
1 teaspoon apple cider vinegar or white vinegar
Pinch of salt
Mold with 24.5 cm diameter
Directions:
Beat the egg whites with the salt, vinegar and cream tartar. Add the sugar, continuing to whisk, and then add the lemon peel and the vanilla extract. Finally add and mix the flour. Put in the pan and bake at 170°C (340°F) for 40 minutes.
