Pizza with ice cubes: here’s a great tip you should try

This unique idea comes from the creator of the trapizzino, famous pizza maker Stefano Callegari. His pizza cacio e pepe is made in a way that will surprise you: it’s baked with ice cubes. After rolling out the pizza dough, ice cubes are placed on it, why? So the pizza stays moist and soft.. as the pizza bakes, the water keeps the center moist and allows the crust to rise faster. Toward the end, a generous amount of pecorino cheese and pepper are added to the pizza. The result is pizza that is full of flavor, where the pecorino and the dough have melted together. His idea was to recreate, in a pizza, the texture and flavor of the traditional spaghetti cacio e pepe.
INGREDIENTS
the dough:
150ml water
8g fresh yeast
2 tsp olive oil
300g flour
6g salt

DIRECTIONS
1. Start by dissolving the yeast in water. Add oil, salt, and then gradually add the flour. Knead until smooth and let it rise for at least 3 hours.
2. Shape the dough into a round pizza. Dusting the work surface with semolina will make the base of the pizza crunchy.
3. Add the ice cubes and bake at 220°C for 20 minutes. The water will keep the dough moist.
4. Top with plenty of pecorino cheese, pepper and basil leaves.
