Potato cannolis

INGREDIENTS
1 potato
6 tbsp olive oil
1 pound potatoes, cooked
1/2 cup heavy cream
3/4 cup mozzarella cheese
Pinch nutmeg powder
salt to taste
spring onion, chopped
INSTRUCTIONS
Preheat oven to 400 degrees.
Slice potato on a mandoline lengthwise.
Wrap each slice around the cannoli tubes and place them side down on a baking sheet.
Brush the wrapped potatoes with olive oil.
Bake the potatoes for 8 to 9 minutes, until crisp and browned.
In a bowl mix together cooked potatoes, heavy cream, cheese, salt and nutmeg and smash it well.
Pipe the potato filling into the cooled potato cannolis and sprinkle with spring onion.
