How to make delicious potato waffle crisps

NGREDIENTS:
Sauce:
3/4 cups grapeseed oil
1 egg yolk
1 tsp dijon
2 tbsp cold water
1 tbsp salt
1 tsp white wine vinegar (optional)
parsley, sage, thyme, rosemary, basil, oregano
1-2 potatoes
Oil for frying
Directions:
In a bowl put the egg yolk, dijon, salt and water and mik all. Then add the oil and mix very well using a whisk. Then cut and add the spices. Then cut and fry the potatoes.
