Short pastry trick

1 short pastry dough
Roll the dough and place it in a baking form, prick it all over with a fork, cover with parchment paper and put rice on pastry. Add the rice to maintain the shape of the crust as it is being baked to avoid puffing.
Bake at 190C/375F for 10 min, remove the rice and bake again for 15 min.
