Christmas tree with tomatoes
published on 18 December, 2017 at 16:48
Ingredients:500 g (1 pound) premade pizza dough;
200 g (7 oz) frozen spinach, thawed;
1 cup shredded parmesan cheese;
300 g (10 oz) ricotta cheese;
salt and pepper;
cherry tomatoes;
¼ cup olive oil;
1 tsp dried parsley;
1 tsp dried rosemary.
Instructions
Preheat your oven to 210C/410F, cover pizza pan with a piece of parchment.
Combine spinach and ricotta with shredded parmesan, season with salt and pepper.
Roll out the pizza dough and trim to make about 30 cm (12 inch) circle. Make diagonal cuts on the sides of the circle without cutting the center.
Fill the center with ricotta mixture to make a triangular shape. Place tomatoes on the sides of the triangle.
Using bottle cap or a small cookie cutter, make cutouts in dough stripes near the sides of triangle. Braid the dough putting the cutouts over tomatoes.
Mix dried herbs with olive oil. Generously brush olive oil mixture on top of the Christmas tree. Optionally: use leftover dough to make the star on top of the tree.
Bake for about 15 minutes or until golden and crispy.
