Baked Avocado Eggs

Ingredients:
2 avocados
4 eggs
1/2 tsp salt
1/2 tsp pepper
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
1/2 tsp garlic powder
1/2 cup shredded sharp cheddar cheese
2 slices bacon, cooked and chopped

Method:
Preheat oven to 425 degrees F.
Halve the avocados and remove the pits. Gently scoop out ½ of the center meat of each avocado half and discard.
Set each avocado in a tin of a 12-cup muffin pan. Add one egg to each avocado cup.
In a small bowl, stir together salt, pepper, smoked paprika, cayenne and garlic powder. Sprinkle spice mixture over the four avocado cups evenly.
Sprinkle each cup with cheese, evenly distributing between the four.
Sprinkle each cup with bacon, evenly distributing between the four.
Bake for 15 minutes until the egg white is set.
Serve immediately.
