Fried Pizza ‘Montanara’: the secret to a perfect dough!

INGREDIENTS for 7 pizzasfor the dough:
250ml water
19g yeast
500g flour
50g olive oil
8g salt
for the sauce:
garlic
olive oil
200g tomato puree
salt
basil
DIRECTIONS
To make the dough, dissolve the yeast in water and then gradually mix in the flour, lastly add the oil and salt. Let the dough rise for 2 hours. In the meantime, start preparing the sauce. Brown the garlic in olive oil until it is golden, remove it from the oil and pour in the tomato puree. Season with salt and basil leaves and let it simmer for about 20 minutes. When the dough is ready, shape it into balls, flatten them and deep fry them. To make the pizzas even lighter, let the dough rise for an additional 30 minutes after having divided it into balls. Once the pizzas are cooked top the pizzas with the tomato sauce, Parmesan cheese, basil, and serve warm.
