Flourless rice cake recipe: simple & yummy

Ingredients:
1lt milk
300g rice
100g sugar
50g butter
3 whole eggs
100g raisins
50ml vin santo
The zest of a lemon
Vanilla extract
pinch of salt
Pour the milk into a pot, add the lemon zest and bring to a simmer. Add the rice and cook. Separate egg yolks and whites and whisk the egg whites with salt. Once cooked allow the rice to cool, add the butter, the egg yolks, sugar, vanilla extract, raisins (mixed with vin santo) and the whipped egg whites. Pour the mixture into the pan and bake at 180°C (360°F) for 50 minutes.
