Eggplant mini pizzas: Easy, quick and tasty!

Both adults and kids will like these fun and tasty treats. Here is how to make them:INGREDIENTS
1 eggplant
salt
oil, as needed
100g tomato puree
50g Parmesan cheese
mozzarella cheese
DIRECTIONS
Slice the eggplants into 1.5 cm slices. Place them onto a baking sheet, make some cuts over the top of each eggplant slice, season with salt and oil and bake them at 180°C for 20 minutes. Remove them from the oven and spread some tomato puree over each slice, add some oregano, salt, Parmesan and mozzarella cheese. Bake them for 10 more minutes and serve them hot topped with a basil leaf.
